searoot supper club is a project dedicated to deepening your sense of place in the Pacific Northwest through food. searoot has a distinct palate, fusing a love for Seattle’s abundant ecosystems and diverse flavors with our chef’s background as a sustainability professional. Our menus celebrate the beauty of local vegetables and grains and use meat and other animal products thoughtfully and responsibly.
As the climate crisis deepens and intensifies, a critical part of community resilience is continuing to gather joyfully. We can build hope and resilience by eating together and eat in a way that minimizes our impact on the land. searoot’s role in this is two-fold: the sustainability of our process and the mission of our meals.
A sustainable dinner means more than just sourcing, but that is our greatest opportunity for impact. In every possible instance, the ingredients in your meal from searoot will be locally sourced, organic, and grown regeneratively or using the most sustainable process available. Direct partnerships with farmers, foragers, and producers allow us to be transparent about the way your food arrives on your plate. searoot’s kitchen also strives to be zero-waste, which means every part of each ingredient has a role to play in your meal. Finally, Chef Eli’s background as an environmental professional means that your meal will have the lowest embodied carbon footprint possible. Our menus are not exclusively plant-based, but we are deeply concerned by the impacts of animal agriculture and strive to make hearty meals centered around vegetables. We source our animal products at the highest possible standards and eat with reverence for the living beings that brought us our meal. Ultimately, a searoot meal should feel like stewardship of the ecosystems, economies, communities, and land that bring you your meal.
Sustainability at searoot goes beyond ingredients. Persevering through climate catastrophe will require us to strengthen our bonds with our community, our land, and the interconnected web of life. This does not mean eating with searoot is a bummer! In fact, acknowledging the complex systems that bring us our food, dining gratefully, and connecting with each other is a truly joyous experience.
